At what ABV does it stop fermenting?

It has an alcohol tolerance of 16%. I have had it go to 14%.

Does this yeast do malolactic fermentation converting malic acid to lactic acid? If so about what percent gets converted?

That is yeast, not malo-lactic bacteria, so no is the answer.

How many packets do I need to make 5 gallons of mead at 16% abv? Starting gravity about 1.122.

Packets are usually 1-3 gallon. I would use 2packets. Its very hard to over pitch yeast but things like acidity, avaleable yeast nutrient, temp... can make it difficult for a colony to build. Trying to save an extra 1/2 pck of yeast can slow the start up process. I have a 6 gal carbouy and use 2 pks.
