Absolutely fits the bill to a tee, excellent price / performance - fantastic product!
I am an avid home cook and knife collector, and I've been on a quest for the ideal way to sharpen up my kitchen knives for quite some time now, experimenting with various manual sharpeners, honing steels, Japanese waterstones, and the like. I finally decided that this particular Chef's Choice 220 had the best price-to-performance ratio of the models listed, and for the price, I really couldn't go wrong. The unit is fairly small and compact, and stows away nicely when not in use. I brought out a few of my cheaper knives to test the machine out with, as I've read about some electric sharpeners not doing such a great job, and some even leaving very visible scratch marks on the sides of the knives when they are done.I turned on the unit and was further pleased to hear that it only generated a quiet hum, as opposed to reports of other louder grinding machines. I first tried to sharpen a very inexpensive santoku knife about 10 times through each side of the two 20-degree angled sharpening slots. The grinding sound is perfectly acceptable - in fact, much less noisy than even my coffee grinder. I then proceeded to do 20 back-and-forth passes through the manual sharpener to the side. As a first test, I ran my finger along the blade edge to feel for any nicks and burrs, and surprisingly I managed to cut myself - twice! This machine does some serious sharpening in a very short amount of time! I then proceeded to do the "paper test", and the "tomato test". My cheap Oster kitchen knife performed incredibly, carving up thin ribbons of paper like a samurai sword, and producing fine, translucent slices of tomato with great ease. After sharpening it at an even finer angle (there is some degree of mobility in each slot, to accommodate different sizes of knives), I was able to do the "palm shavings test" (which I don't recommend, but anyway), where there was a very fine dust coming off my palms when rubbed on them at a tight angle, like a razor blade. Do this very carefully!The only drawbacks I can see to this unit are that it only sharpens to the Western standard 20 degree blade angle, and it will not sharpen Japanese deba style knives or other specialty knives. Chef's Choice does make higher end models that sharpen those. For the price, I don't see this as much of a disadvantage. In short, I am incredibly pleased with the results that this little machine produced with such little effort, compared to the great lengths of time I've spent with manual methods. Highly recommended for home cooks as well as professional chefs!

Nice modern upgrade from the old one. Eady to use gets my knives nicecand sharp. 🤣 I even sharpened my pizza cutter today now it will cut right through!

good knife sharpener
This Chef's Choice 220 Hybrid Diamond Hone Knife sharpener does a great job at sharpening knives - actually, more specifically, kitchen knives. It will give the knife a rough edge, clean it up a bit, then hone it for a super-sharp edge.I've found that when trying to get an edge on some thicker camping-style knives, they are often too thick to get all the way into the thin groove. That's the reason I gave it 4 stars instead of 5. However, if you're only going to sharpen kitchen knives, give it a shot! It really takes seconds to operateand get a decent edge, instead of spending 15 minutes or longer putting an edge on manually. This is a nice product and worthwhile investment if you're wanting to take advantage of your knife set.

Works Well For Me
Bought a pretty good chef's knife, an 8" Victorinox, maybe not top of the line but still a pretty nice knife. Came nice and sharp but wasn't going to stay sharp forever... so I bought the Chef's Choice 220. Keeps the Victorinox, with a thin gauged blade, nice and sharp. It works. And it's easy, left slot, right slot 4 or 5 times and then back and forth manually in the slot on the far right.It's put an edge back on my cheapo older knives too, but not like the Victorinox. Have some 30+ year old Hampton Forge knives, very inexpensive, made in China (under $20 for the set back then). The blades are a thicker gauge and in some cases have to be pushed down in the slots. I really like the 8" chef's knife, yeah cheapo but full tang blade, 3 riveted handle, nice feel and weight. Got an edge back on that knife (dull for years) but I doubt it will ever be as sharp as the new Victorinox. Still I can use it now, might be cheap but I like that knife. Also put a better edge on my cheapo Farberware bread knife, works for serrated too. I have a 6" Henckels chef's knife ordered, maybe I'll get to do a little name-dropping on knives for a change. I'm confident this chef's choice 220 will keep the Henckels sharp too. I actually give it a 4.5, but that's good enough for a 5.

Grandpa Would Have Used It!
My grandfather was a rancher in south Texas and I'd watch him carefully hone his pocket knife on a small whetstone in the evenings, sitting at the front porch while visiting with neighbors. He used just the right angle to make it as sharp as possible and it was always razor sharp. Ever since then, I'd use nothing but non-stainless kitchen knives and use a variety of whetstones with which to sharpen them. I'd even use a cork and cleanser to shine up my carbon steel Sabatier knives! Through the years, I gave in and began buying stainless steel knives but maintained my snobbery of using nothing but fine whetstones to keep them sharp. Then I read about the Chef's Choice 220 Hybrid Diamond Hone Knife Sharpener. I could try it on some old knives and if it didn't work, I'd sharpen our "good" stainless steel knives with whetstones. Well, let me tell you - this electric sharpener is the cat's pajamas! I quickly moved from the old knives to our good ones and tried a paring knife in desperate need of sharpening. It sliced through a ripe tomato with ease. If you have a sensitive touch to these things (which I do), you can feel a bit of a "bite" as the knife cuts. Hard to explain but you can just tell that the knife is as sharp as it's going to get. And in my case, our knives are all in good shape so it only took a few passes to get them sharp. The final step is non-powered and it just sets up the knife edge to a razor sharp alignment. If I had known this new-fangled, electric knife sharpener worked this well without destroying good knives, I'd have gotten it years ago. It works so well, Grandpa would have used it! (and loved it!)

Come da descrizione!!Niente male!!Faccio una premessa, non sono un'arrotino e non mi intendo di affilature di lame particolari, ma capisco quando un coltello è ben affilato o meno.Questo oggetto è stato creato solo ed esclusivamente per mantenere affilati i nostri coltelli da cucina e per uso casalingo, ed in questo lavora piuttosto bene e riesce a mantenere un buon filo affilato.Credo che se dovessi fare il pignolo direi che per un buon lavoro bisognerebbe ripassare la lama usando una pietra a grana più sottile, poiché lavora con mola da sgrossatura.Se si considera in oltre che il lavoro viene fatto in meno di 5 min, direi che sono davvero soddisfatto.....Per coltelli da Chef di gran valore economico con lame damascate personalmente lo farei fare a mani esperte da personale qualificato.Ma se cercate un oggetto semplice, veloce, di facile utilizzo, questo affilacoltelli è la soluzione giusta.Poi c'è anche la versione totalmente elettrica che utilizza tre diverse mole con i diversi gradi di affilatura che rendono il lavoro ancora più professionale e perfetto.....ma se cercate un giusto compromesso qualità prezzo, mi sento di consigliarlo a tutti.
