I use this for frying eggs in the morning. It's great. The thing is, coconut oil in general doesn't break down in high heat like olive oil does - - that's why you can use this herbalized oil for popping popcorn, which is a very high-heat process. I noticed that even after some time, you don't have to refrigerate the oil. It's like ghee, it is so pure you don't have to refrigerate or even screw the lid on very tight.
